A friend at school offered to bring me in a zucchini from her garden recently. I said sure, and she showed up with a zucchini big enough to knock out a grizzly bear.
The only thing I really do with zucchinis is make my Zucchini Bread dessert. If you check the recipe, it calls for 1 1/2 cups of zucchini, and in brackets tells you that this is about two small zucchinis. From this sucker, about 1/6th of it amounted to 2 cups of shredded zucchini.

Do big zucchinis like this taste as good as the small ones? I've always wondered if they taste worse when you let them grow too big.
I've had friends give me zucchinis from their gardens as well and they always seem to be jumbo size and I have to figure out what to do with the extra. I've started to wonder if they're really my friends (haha).
I've just bought a fabulous book called 'red velvet & chocolate heartache' by harry eastwood :
it's full of cake recipes that use grated courgette *as we call them here in UK*, or carrot, sweet potato, pumpkin and other veg! a good alternative and yum too ^_^
